As you approach Alba Thermal Springs & Spa along a long driveway across the dunes, it feels as if you are entering another world. The impressive architecture of the site amid the wide-open spaces of Fingal hint at the uniquely luxurious experience you are about to embark on. Alba is a sanctuary of restorative geothermal springs, luxurious treatments and exquisite, nourishing dining.

At restaurant Thyme, savour an all-day menu created by well-known Melbourne chef, author and television presenter Karen Martini that highlights locally sourced seasonal produce.

Thyme’s menu features fresh, healthy dishes served alongside excellent coffee, herbal tea blends, local cold-pressed juices, signature cocktails and local wines, beers and spirits. Whether you are looking for a healthy accompaniment to your bathing ritual or a special indulgent moment as you embrace your self-care, the carefully curated Thyme menu offers something for everyone.

A favourite healthy dish is the kingfish crudo, served with pressed ginger vinaigrette, kohlrabi, miso mustard and caviar. Or if you feel like something a little more decadent, the Three Colour Drink (pictured) made from a delightful combination of coconut crème, vanilla gelato, coconut jelly, glutinous rice, pawpaw, lime pearls and sesame brittle is a popular choice.

You can select from the a la carte menu or purchase a special package that includes two courses from the full menu and a glass of local wine or beer, together with bathing. While you can opt to enjoy bathing and dining as a complete experience, a small number of dining places are available for non-bathing guests.
